Pagkaing Pinoy-Kare-Kare (Beef Tripe)
Tripe is a type of edible offal made from the stomach of various domestic animals. Beef tripe is typically made from the first three of a cow's four stomachs, the rumen (blanket/flat/smooth tripe), the reticulum (honeycomb and pocket tripe), and the omasum (book/bible/leaf tripe).
Different countries have different tripe recipes. Here is one Filipino recipe.

K A R E - K A R E
(Tripe Curry in Peanut Sauce)
Ingredients:
2 lbs Beef tripe
3 medium Eggplants,cut into 1-inch size
1 bundle green beans, cut into 2-inch pcs.
1 package Banana flower
1 cup Peanut butter
1 medium Onion, sliced
5 cloves Garlic, crushed
2 tbsp Vegetable oil
Cooking Directions:
1. Boil the beef tripe for 1-2 hours or until it is tender. Then cut the
tripe into 2-inch square slices.
2. Saute the garlic and onion in the vegetable oil. Add the boiled tripe
and the rest of the vegetables. Add water and cook the vegetables until
tender.
3. Add in peanut butter and stir for 10 mins.
4. Serve hot with shrimp paste to taste as garnish.
